Sweet potatoes are everywhere right now. Gearing up for the holidays, you will probably have this vegetable in the different forms of pie and casserole, and baked in the oven with those little marshmallows melted on top! One thing you can do with all of the family and unexpected guests coming in and out is make a batch of homemade sweet potato chips.
This is a very simple and healthy snack, and is easy to make. I simply gathered up 3 or 4 white and orange sweet potatoes and sliced them very thin using a mandoline. It is difficult to get consistently thin slices with a knife, but if you have a steady hand you can certainly go this route. Keep in mind you want all of the slices consistent so cooking time doesn’t vary.
Heat peanut oil in a cast iron pan hot enough that when potatoes are inserted they immediately sizzle.
Do not overcrowd your pan and cook them in batches, stirring the chips and pushing them down to cook evenly. With the oil at the right temperature, the chips should crisp up in 3-4 minutes. Remove the chips from the oil once crisp and let them drain on a paper towel.
Sprinkle the chips lightly with sea salt and cinnamon. Serve warm or place in a sealable bag for serving later when the guests start to arrive — if you can wait that long!
